The property of tube structure, it is resistance to bending evenly in all directions. And it resists torsion as well. It is also the tube itself rather than the space inside that provides the passageways for the liquids moving through the tube. The surface texture of the tube and the bends determine the flow capacity of the tube.
Short tubes offer a number of features that are advantageous as pasta shapes. For example, the elbow shaped macaroni, provides a tubular (plate 7A) surface through which water can pass. The design of such shape helps water and oil to flow faster and more even cooking than an equal mass of a more solid shape. Similarly, inside the Hot Dog (plate 7B) has the tubular structure through which the hot water passes and helps to cook evenly. In nature plants having roots and stems have tubular structures for passing water and food from the grounds (plate 7C&D).
